Orange Cupcakes



Hello guys! Long time no post. But today I had the chance to bake! Purpose? For the halaqa at the masjid. I made orange cupcakes! I actually used a recipe for white chocolate chip cupcakes, but I used orange and lemon zest and extract instead of the typical vanilla extract. I had high hopes for this recipe because i planned to frost the finished cupcakes with pink raspberry frosting. Turns out, we had no powdered sugar. Darn it. I had a different idea though, and it's much more healthy. Yippee. As you can see in the photo above i topped them with strawberries. 


So. The recipe. Right.

1 1/2 cups flour
1 tablespoon baking powder
3/4 softened unsalted butter
3/4 cups sugar
3 beaten eggs

That's the original recipe, but I added more to it.

Orange zest (however much you can get)
Lemon zest (same as above)
Lemon juice (fresh squeezed)
Orange juice (you can use ready made, store bought orange juice if you want to, but so as to not waste the oranges i used their juice.)

I used one orange and one lemon.

~ Preheat the oven to 375 degrees F. Line your cupcake tray(s).
~ Sift flour and baking powder in a bowl and add the butter, sugar, eggs, and all the orange-lemon stuff. Beat until smooth.
~ Spoon the batter into the cupcake tray(s). Bake for 15-20 minutes. Let cool.
~ OPTIONAL: Rinse and dry five or six strawberries. Cut them into halves or fourths. Cut wedges from the top of the cooled cupcakes and stick the strawberries into the wedge.
